Black Rice Salad with Sweet Potatoes & Cranberries

This is the perfect dish to bring to a potluck — its tried and true and guaranteed to be a crowd pleaser :)

Ingredients:

  • 3 C cooked Black Rice

  • 2 C Sweet Potato (1/2-1” cubed roasted or steamed)

  • 1/2 tsp Paprika

  • 1/4 tsp Pink Salt

  • 2 T Olive Oil

  • 1/2 C Pecans, coarsely chopped

  • 1 1/2 T Lemon Juice

  • 1/2 T Maple Syrup

  • Pepper to taste

  • 2 T Sliced green onions

  • 1/2 C Dried Cranberries

Directions:

  1. Combine rice, sweet potato, dried cranberries, and pecans.

  2. Whisk together in a bowl olive oil, lemon juice, maple syrup, paprika, salt + pepper.

  3. Toss into the rice mixture.

  4. Top with green onions and enjoy!
