This is the perfect dish to bring to a potluck — its tried and true and guaranteed to be a crowd pleaser :)
Ingredients:
3 C cooked Black Rice
2 C Sweet Potato (1/2-1” cubed roasted or steamed)
1/2 tsp Paprika
1/4 tsp Pink Salt
2 T Olive Oil
1/2 C Pecans, coarsely chopped
1 1/2 T Lemon Juice
1/2 T Maple Syrup
Pepper to taste
2 T Sliced green onions
1/2 C Dried Cranberries
Directions:
Combine rice, sweet potato, dried cranberries, and pecans.
Whisk together in a bowl olive oil, lemon juice, maple syrup, paprika, salt + pepper.
Toss into the rice mixture.
Top with green onions and enjoy!
