Zucchini-Banana Bread

Can’t believe we haven’t shared this recipe yet!!! It’s one of our favorites and we hope you enjoy it as well! GF/DF/Refined sugar free…that’s what we are all about!

Ingredients:

  • 3 C Almond Flour

  • 1 C Coconut Flour

  • 2 tsp Baking Soda

  • 1 tsp Baking Powder

  • 1/4 tsp Salt

  • 1 C Maple Syrup

  • 1/2 C Coconut Oil

  • 4 Large Eggs (ideally room temp)

  • 6 tsp Vanilla Extract

  • 1 C Shredded Zucchini

  • 2 C Mashed Ripe Bananas

  • Optional: Chocolate Chips… you decide how many ;)

Directions:

  1. Preheat the oven to 350F and either prep a loaf pan or muffin tray.

  2. In a medium sized bowl mix all dry ingredients together.

  3. In a smaller bowl mix all wet ingredients together (this does not include zucchini or banana yet)

  4. Pour the wet ingredients into the dry and stir to combine. NOW stir in the zucchini. Once that is mixed well add the mashed bananas and mix well. *If you’re adding choc. chips do so now

  5. Pour your batter into either your greased loaf pan or muffin tray. NOTE: Dough rises a little and because of the texture it looks best if you smooth out the dough with a spoon before baking.

  6. If you’re baking a loaf, bake for 60 minutes and check with a toothpick. If you’re baking muffins, bake for 25 minutes and check with a toothpick.
