Mac Nut Cheese

A “cheese” 🧀 dip even you die hard dairy lovers will ohhh + ahhh over! This recipe is so yummy and very versatile — make one batch then divide it up and mix up the flavor options! We made 3 kinds — plain, kalamata olive, + spicy chipotle habanero!

Ingredients:
1 C raw macnuts or cashews (I used macnuts because it’s what I had at home)
1/4 C filtered water
1/4 C + 1 T nutritional yeast
2 T lemon juice
2 cloves garlic (or 1/2 - 1 tsp powdered in a pinch!)
2 T white wine or 1 T raw apple cider vinegar
1 T dijon mustard
Sea salt + pepper to taste (1/2 tsp salt + 1/4 tsp pepper)
Directions:
1. Simply add all ingredients into your high speed blender and blend until thick + creamy.
2. ADD extra ingredients based on which version you’d like to try.
NOTE: It will be the consistency of thawed or stirred cream cheese. This will harden after chilled.
Store in the refrigerator for up to 5-7 days. Enjoy!

*Olive Version:
1/3 C kalamata olives, chopped - add to mixture in blender and pulse a few times to incorporate. Be careful not to overblend.

*Spicy Version:
1 T organic chipotle habanero pepper sauce - mix in by hand.
*Some other ideas:

Sun-dried tomatoes
Capers
Fresh or Dried herbs
Whatever your heart desires!
