Homemade Granola

The smell in our house today is a mixture of golden browned almonds, toasted coconut, and cinnamon… yum🤤! All the smells of Fall. Making granola is super simple, cost effective, and totally worth it!

For my granola I use:

  • 3 C oats

  • 1 C whole almonds

  • 1/2 C pecans (or walnuts)

  • 1 C shredded coconut (or flakes)

  • 1/2 C maple syrup (or honey)

  • 1/2 C coconut oil

  • 1 tsp cinnamon 1

  • 1/2 tsp salt

  • *Optional 3/4 C sesame seeds

  • 1/2 - 1 t. cardamom.

✨And you can play with different nuts, seeds and fruit (cashews, hazelnuts, sunflower seeds, pumpkin seeds, hemp seeds, raisins, currants, blueberries, etc.) If using dried fruit, add it to your mixture at the last 5-10 minutes of the cooking time to ensure your fruit doesn’t burn.⁠

Directions:⁠
1. Preheat oven to 325F⁠
2. Mix oats, nuts, seeds, coconut, cinnamon + salt in a large bowl.⁠
3. In a smaller bowl combine the coconut oil + maple syrup.⁠
4. Pour wet ingredients into the dry and mix until well incorporated.⁠
5. Spread evenly on a baking sheet lined with parchment paper.⁠
6. Cook for 20 minutes or until golden brown. *stir the granola halfway to ensure that it is evenly cooked.⁠
