Chia Seed Pudding

This dessert is soooo good and sooo easy. Not to mention, a great healthy treat :) Just remember that it takes 8 hours to soak before it’s ready — so prep time is crucial :)

Ingredients:
1 1/2 C Coconut Milk
1/4 C Maple Syrup or Honey
1 T Vanilla Extract
1/2 tsp Almond Extract
1/3 C Chia Seeds
1/2 C Berries (for topping)
Directions: Mix everything well excluding fruit. Allow the mixture to soak overnight or at least 8 hours. Mix a couple times in-between. Top with berries and enjoy! For this occasion, I layered the pudding and fruit in a trifle bowl to show off the colorful layers. *Optional: Add more coconut milk or water until you reach desired consistency
