Dark Chocolate Almond Butter Sea Salt Cookies (GF/DF/Grain Free)

Ingredients:

  • 1 C Creamy raw Almond Butter

  • 3/4 C Coconut Sugar or Sucanat

  • 1 Egg

  • 1 Egg Yolk

  • 1 1/2 tsp Vanilla extract

  • 1 tsp Baking Soda

  • 1/4 tsp Pink Salt

  • 4 ounces Dark Chocolate coarsely chopped.

  • Flakey or coarse sea salt for sprinkling

Directions:

  1. Preheat the oven to 350F and line two baking sheets with parchment paper. (These cookies spread out quite wide)

  2. In a medium sized bowl add the almond butter. In a separate bowl whisk together egg + egg yolk. Stir the coconut sugar into the almond butter until thoroughly incorporated then add baking soda, salt, + vanilla. Stir until completely mixed then add the whisked egg + egg yolk to the mixture and stir once more until completely incorporated. Fold in the chopped chocolate until well incorporated.

  3. With a 1 1/2” cookie scoop drop mounds of dough on to lined baking sheet. Evenly space 12 cookies onto the pan.

  4. Bake for 10-12 minutes then remove and let cool for 5-7 minutes. As the cookies are cooling sprinkle them with a little bit of flakey sea salt.
